I’ve always wanted to try making my own granola. I guess for some reason I always thought it would be a lot of work? It’s not. It’s so easy. My friend Anna makes great granola and I thought of her while baking this. I found a basic recipe, made a few adjustments and came out with a yummy end result.
- 5 cups old fashioned oats
- 1/4 cup brown sugar
- 1/2 cup honey
- 2/3 cup canola oil
- 1 tbsp vanilla extract
- 1/2 tsp salt
- 1 cup walnuts (optional)
Preheat oven to 325 degrees.
Mix all ingredients in a bowl. Spread onto a greased or parchment paper lined jellyroll pan. Heat in oven for 20 minutes or until golden brown – check and stir every 5 or so minutes. When golden brown, remove from oven and allow to cool. Store in an air-tight container.
I kept it pretty simple, but there’s tons of stuff you could add to it: different nuts (peacans or almonds, maybe?), craisins, flax seeds, CHOCOLATE CHIPS?! After it comes out of the oven, of course. I’m also thinking about using coconut oil instead of the canola oil, next time around might be good. And of course, I made this good-for-you-granola and immediately put it on some ice cream…
But it’s also good on yogurt and fruit salad. :)
