Are you contemplating not even bothering to read this because I started with brussel sprouts? Well, trust me, they’re really good, so just keep readin’! I admit I hated brussel sprouts until I tried roasting them. Don’t knock it till you try it. No joke. These things are so much better when they’re roasted.
They even look really good, right?! At this point, I’m pretty much willing to eat any roasted vegetable. It’s my new fave way to prepare veggies.
Something about that golden brown color they develop. And they get nice and tender too. Even though I’m sure once you try this new doors of brussel sprout amazingness will be opened to you, you probably still won’t be able to get your 5 year old to eat them. Sorry.
Cut the brussel sprouts in half and place them on a baking sheet, coat with olive oil, season with salt and pepper, and roast in a 375 degree oven for about 20 minutes or until golden brown. YUM!
