Italian with a twist

Made Mexican stuffed shells for dinner:

Topped with scallions and sour cream they were very very good! It was fun to put a twist on a traditional Italian dish, and they reminded me of beef enchiladas. D is very excited to take some leftovers with him to work tomorrow for lunch.
